I bought one of those HP servers from newegg many years back. Grandmas dell just died.
What OS can I put in this HP server that came without OS. Thanks,

For just surfing the net...Peppermint OS

For a fully loaded OS...Linux Mint

Both are based on Ubuntu LTS (Long term support) that will be supported until 2019.

When I was in college I ran my netbook - same computer I am using now but with a "big boy" SSD - off of Linux Mint XFCE. Worked quite well and got real good battery life. It was SLOW if there was any intense read/writes to the hard disk, though.

Mint, MATE version. Unlike Ubuntu it will come stock w/ a lot of codecs and plugins that Canonical (Ubuntu) is not able to redistribute. The MATE version will be lighter on resources and will not require any fancy-pants 3D-accelerated graphics cards.

And MATE is the closest to a traditional (pre-Windows 8) Windows desktop, if that's what you're used to.

update:
thanks a bunch guys, you guys rock.

I ended up doing MINT,
I used pendrivelinum to create the bootable usb drive

stick in the usb port and reboot,
wow, booted up in mint, clicked install.
took few minutes (left the room)
came back and took out usb stick and restart machine.

logged on to mint and clicked Auto update,
and flash, etc all worked fine.

love it!
