I'm running a cheap dongle and Torque pro.

Transmission temp was a pain, but eventually figured it out. Torque let's you enter custom PID's, but the format is difficult.

Not all parameters are on the standard OBD line, GM especially likes to run stuff on a separate network called GMLAN. It's possible to tap into it, and if so do things like roll down your Windows and adjust the radio, but adapters are either custom made or expensive.

I use Torque and for my Hyundais there is a cheap add on plugin called Advanced Hyundai that will show many OEM parameters not in the generic OBDII list.
