Here is some good info from an innovator in this technology.
What you guys are referring to is emissivity. It may not make much difference in your application or expectation of accuracy, but you should at least be aware of it. Some higher end units have adjustable emissivity settings, lower ends are fixed. There are lookup tables for the surface you are measuring and the corresponding emissivity values. You can use them on aluminum, the main variable is the surface treatment or coating.

That is the one I bought 2 of on Ebay about a year ago. They seem OK. I paid about $15 each coming from China. The Amazon ones are a good deal. I compared them to a gun "don't remember the brand" I had been given as a gift about 6 years ago. They are all fairly close. That one was about $50 or so.

I gave one to my mom to use when checking when chicken and stuff is done cooking.

How do you check the internal temperature of cooking chicken with a non contact IR thermometer?
