I have an 07 Kia Spectra EX. For some reason I can't change the PCV Valve. It seems stripped. I have a few mechanics to check it out. One said I would need to replace the entire valve cover since it's stripped. Any suggestions?

That I don't I wonder if I need to remove the actual valve cover gasket to remove it and replace it?

hmmm, so its a screw-in item?

Worst-case scenario, Id find one with bigger threads and re-tap the VC.

Or bore out the original and just hook a tube to it with another non-threaded (i.e. barbed both ends) pcv in line.

My Uplander has a built in pcv. You have to replace the whole valve cover.

Yours may not be able to come out as well.
