I keep hearing and seeing his name,googled it and nothing. Who's this guy?

It still doesn't say if he is a person or not.All it says is "Phil Wood & Co" and "we". No autobiography.Was it a "phil Wood" that started this co?

Pretty decent petro waterproof grease from my experience. Who is he? I dunno. But Phil Wood hubs and products in general are well respected in the cycling community.

Yes, he was one of the very first to manufacture low volume, high end/quality hubs & bottom brackets, outside of the high quality 'majors' (i.e.; Campy, Shimano, Sun Tour, etc.) of the time period when he started.
