Low oil pressure light cmes on when hot at low RPM

In most any modern engine from the last decade or so it is extremely unlikely that the oil pump has failed. It just doesn't happen much at all.

ALWAYS check the sending unit first as it is far more likely. You must connect a "real" oil pressure gauge to be certain of anything you see on the dashboard...
 
I have seen engines overheat, and then thin the oil out enough to cause an oil warning light to light up.

Any water temperature changes?

Those cars have such wide dead ranges built in, it would really have to be a massive change for the gauge to start moving past 12 o'clock.
 
I had the same issue with my 2.7 Chrysler Concorde with 5W30 Pennzoil Ultra and Schaeffer 7000 10w30. Changed the sending unit that was leaking and it didn't have any impact on the light coming on.

Never has come on with GC or Mobil 1 0W40 and no apparent mileage hit with the thicker oils.
