New zerex (g05,asian) coolants have ph of 8. If it changes up or down, could that show when2 change?

No. The pH doesn't degrade or break down over time.

yes it does. That's why we use ph test strips to determine coolant conditions.

pH is just a logarithmic valuation of protons in a material. The concentration of the H+ will indeed change as the chemistry changes or degrades for both the coolant additives and the metals in the system.

8 sounds too low for corrosion inhibition. A higher pH is better, to a point. Too high of a pH can be caustic.
