Here is something interesting you can play with. NASA has put a jet engine simulator out on the web that anyone can play with. It's kind of amazing how many parameters you can change and see the results immediately, (materials, fuels, inlet etc.).

I found a Brayton cycle simulator online recently.

No graphics, but it allows you to "build" open and closed cycles, with multiple compression stages, charge cooling, and regeneration.

More for power generation activities than thrust generation.
