I've been using "Valvoline Moly-Fortified Multi-Purpose Grease Ford" for the last couple years. Since all I have is newer cars I don't use much. There was about two inches of dried up grease at the end of the tube. I say dried up but I could probably roll it up in a ball. Is this normal? It was stored out of the weather.

It will do this if the oil bleeds out. Greases do this over time. The grease probably went from a Grade 2 to a Grade 4 or 5. The grease is expired and unsuitable for automotive chassis and bearing lubrication.

This is interesting. Some companies put a plastic-wrap seal around the new containers, but many do not. I doubt any of them are air-tight.

Does anyone know what the typical shelf-life is for a tube of grease once it's opened? How about an unopened tube?

All depends on the application. For fifth wheel grease a couple of years. For a demanding environment or when the grease better well [censored] work, once opened I wouldn't go much over a year.
