You could do it, but you'd need a syslog server. I keep the DHCP logs on my Linux server for 6 months. It'd be pretty easy to keep them for two years. The logfile for each day is compressed and stored in a separate file.
This, however, is an excessive burden for most users, who probably don't have any way of saving or storing those logs.
