What to do with Late October 2009 Apple Mini?

If it still boots and runs MacOS, I'd make sure it was fully up to date with Apple firmware updates before I did anything with it.

Personally, since I like to tinker, I'd replace the drive with a cheap SSD and install Linux with a lightweight desktop environment and go from there.

I'm a Windows user but Linux certainly has its use cases. Revitalizing an old PC is certainly one of them, and it's getting much easier to use.
